How did you come up with this idea?

We love traditional sushi, but noticed a lot of our friends were put off by the concept of eating raw fish with rice. Even more Americanized sushi that uses no raw fish still seemed alien to them. We believe that by introducing sushi in a more accessible way, more people can be exposed to this amazing food.

Are you ever planning on offering more traditional nigiri?

Our focus is on more American comfort food inspired sushi creations. While we love traditional sushi, our goal is to offer something new and different.

What gives you the right to call what you make sushi?

We have immense respect for the art and tradition of sushi. Our creations at Let It Go Sushi are inspired by the fundamental concept of sushi – rice with a topping. While traditional sushi primarily features fish, our approach is to explore this concept with a twist, using familiar American flavors.

Think of it like sushi with a twist. We’re not trying to outdo the classic; we’re just having a bit of fun and experimenting with flavors. It's our way of celebrating the essence of sushi while making it a bit more relatable for everyone. So, while it’s not your typical sushi, it’s our take on keeping the sushi vibe alive and kicking in a fresh, exciting way.
